Dr. Penny Wilson is a Registered and Licensed Dietitian and a Board Certified Specialist in Sports Dietetics. She works with athletes to perform their best in racing and in life. She also enjoys working with non-athletes to help them learn to use the eating and food tricks of athletes to fit healthy food and eating habits into their lives. Through her private practice – Eating for Performance – she works with endurance athletes across the nation and internationally to help them reach their goals and personal best. She was the Dietitian for the Houston Rockets and the Sugar Land Skeeters. In addition to her work with athletes, Penny taught Sports Nutrition at the University of Houston for six years. Jacqueline B. Marcus, MS, RDN, LDN, CNS, FADA, FAND is President/Owner of Jacqueline B. Marcus and Associates Food and Nutrition Consulting in Highland Park, Illinois. Jacqueline is a prolific speaker and writer who specializes in the interrelationships of nutrition, food science and the culinary arts as they affect taste throughout the lifecyle.
As a former food magazine writer, editor and photo stylist with a degree from Northern Illinois University in Consumer Science and Instructional Technology, Jacqueline aspired to work for the Chicago Tribune as a food editor. Not having a mentor, Jacqueline returned to Northern for a degree in nutrition; first as student-at-large due to all of the science perquisites. Three years later with a thesis and Master’s degree--but no internship, Jacqueline joined the first community hospital wellness program in the country as a food and nutrition educator. Five years later, Jacqueline started her private practice and the long and winding years that followed all contributed to her abilities today.
Jacqueline credits her membership in NE with indispensable support during the formative stages of her career. She won the American Dietetic Association Foundation (ADAF) Award for Excellence in Private Practice and Consultation, was honored as a Charter Fellow of ADA, served as Sports, Cardiovascular, and Wellness Nutrition (SCAN) and Food and Culinary Professionals (FCP) Chair, President of the Chicago Dietetic Association, was recently Dietitians in Busniess and Communications (DBC) Nominating Chair and is currently an appointed member of the Academy of Nutrition and Dietetics (AND) Committee for Professional Development. The culmination of Jacqueline’s career is her recent text, "Culinary Nutrition: The Science and Practice of Healthy Cooking" (Elsevier, 2014), which won the 2014 Gourmand World Cookbook Award: USA, Best Author or Chef for Professionals and the 17th World Congress of Food Science and Technology Global Food Industry Award: Special Mention, Communicating Science-Related Knowledge to Consumers Aimed at Improving their Lifestyle.

David owns TD Wellness, LLC, a nutrition and health consulting business, providing solutions for healthy living for individuals, organizations, and corporations such as City of Smyrna, City of Avondale Estates, Cobb County, Kaiser Permanente, Atlanta Gas Light and OFS Fiber Optics. David also works with organizations such as the Emory Latino Diabetes Program, the Diabetes Association of Atlanta, and is spin instructor for Exhale Spa and Core Body Fitness in Atlanta GA. He also offers nutrition and menu consultation to the restaurant industry.
David loves enjoying time with his wife, daughter, and dog. He loves to cook, being active out doors, biking, hiking, camping, and holds the rank of Sandan (third degree black belt) in the Japanese martial art of Aikido.
Krista Ulatowski, MPH, RDN, owner of KUcumber Nutrition Communications, creates and implements marketing, communications and public relations programs for Registered Dietitian Nutritionists (RDN), health and wellness professionals, and food and beverage companies. Writing that attention-grabbing pitch that gets results; seeing clients’ names in print; generating new social media content; helping clients advance their businesses – these are things that excite her about her business.
Prior to becoming a dietitian, Krista spent nearly 10 years in the world of advertising and PR, working at national firms based in Minneapolis and Seattle. Her clients were major names in the grocery, healthcare, medical device, consumer and technology industries. Krista holds her Masters in Public Health and Nutrition from the University of Washington in Seattle, and her BA in Journalism and Advertising from the University of Wisconsin. Elana is a nationally recognized food and nutrition communications expert and spokesperson with nearly two decades of experience working in communications. Her first job was as an on-camera spokesperson, which then led to a rewarding career in public relations, working for major agencies in Chicago, Denver and Washington, D.C. Along the way Elana earned her master’s degree and became a registered dietitian, which allowed Elana to specialize in nutrition communications. Kara Lydon, RD, LDN, The Foodie Dietitian, is a nationally-recognized food and nutrition expert based in Boston, MA. She is also a certified yoga instructor and enjoys teaching classes for corporate clients. Alex Caspero MA, RD, CLT, is a Registered Dietitian and nutrition expert with a passion for both health and wellness. Alex is a nationally recognized nutritionist and appears regularly on TV, print and social media. She was most recently featured in Runner's World, Men's Health, Fitness, Details and Forbes Magazine. As the Campus Dietitian, Director of Wellness and adjunct instructor at University of the Pacific, Alex teaches what she preaches. Through innovative programs and services, Alex inspires students to become their healthiest selves. Her blog, Delicious Knowledge, focuses on making whole-food eating deliciously simple. She also serves as a consultant and spokesperson for several like-minded companies to develop nutrition communication strategies and recipes. Alex received her undergraduate degree from James Madison University and Masters in Exercise Physiology from University of the Pacific. Carrie is the Chief Acquisition Director for NCES, Inc. in Olathe, KS. Prior to this position she worked as a Clinical Dietitian in a Kansas City area hospital. She specializes in marketing nutrition education products to dietitians and healthcare professionals, both nationally and internationally, via the NCES catalog and various social media outlets. She enjoys working with other dietitians and helping them market their books and publications. Carrie is also responsible for the creation of education products, and has designed numerous teaching tools for schools, nutrition and other healthcare professionals. She is the past President of the Kansas City Dietetic Association and received their Emerging Dietetic Leader Award in 2011. She is excited to continue working with the Nutrition Entrepreneurs Executive Committee and enjoys collaborating with all of the great entrepreneurs in this group.
Megan Ware is a registered dietitian and owner of Nutrition Awareness, based out of Orlando, FL. Megan works as a personal nutrition consultant to help her clients optimize their lives with food, regularly blogs and shares recipes at meganwarerd.com/blog and writes for several media outlets on trending nutrition topics. She is passionate about supporting small business and the local economy, especially farmers and farm-to-table start-ups. Megan is the Social Media Committee Chair for the Orlando Academy of Nutrition and Dietetics. Alicia is a registered and licensed dietitian in private practice, located in Dallas, Texas. She completed her degree in Nutritional Sciences at Texas A&M University and her Masters in Counseling from the University of North Texas- Dallas. After working in clinical nutrition and home infusion for 4 years, she launched her own practice and received her certification in LEAP therapy, specializing in chronic inflammatory conditions and food sensitivities. She also partners with local athletic training facilities and mental health groups to educate staff and clients on role nutrition plays in these populations. In her free time she volunteers with a non-profit organization, Girls on the Run, whose mission is to empower young girls, teach healthy habits, and working towards the goal of running a 5K. She is a member of the Dallas Academy of Nutrition and Dietetics and Texas Academy of Nutrition and Dietetics and has served as a mentor for the Mentoring Program of Nutrition entrepreneurs.
Carol is the owner of On Nutrition, a private practice in Rochester, NY which provides outpatient nutrition counseling for medical nutrition therapy (MNT), weight management, and sports nutrition. She received both her Bachelor and Master of Science in Nutrition from Case Western Reserve University in Cleveland, OH and she is an active member of the American College of Sports Medicine. Carol is certified as a Wellness Coach through WellCoaches®. She also holds a Certificate of Training in Adult Weight Management from the Academy of Nutrition and dietetics. Carol has served as past editor of NE Ventures member newsletter, as past chair for the Private Practice Specialty Group, and as a member of the Nominating Committee for NE. Carol lives in Fairport, NY with her husband, three children and menagerie of pets and she is an avid, albeit slow runner.
Joanne Larsen, MS, RD, LD, dietitian entrepreneur, has worked at four technology companies. As owner of Nutritional Data Services, a consulting B2B company, she develops websites, software, phone apps, marketing health products, and creating web content.
Since 1989, she has designed nutrition software for consumers and dietitians. Starting in 1995, she created web based software and nutrition content including Ask the Dietitian® , launched in July 1995. Since 2000, she has developed nutrition apps for smart phones. As the online development editor for the Academy of Nutrition and Dietetics, she created the Nutrition Care Manual, a web based nutrition practices manual which is the gold standard for hospitals, clinics, long tern care, dietitians and other healthcare professionals. In 2010, Joanne acquired NAT (Nutrition Analysis Tool), free diet analysis software, from the University of Illinois. Julie Beyer is the owner of NutraConsults, LLC, a nutrition education and communication company. A duel graduate of Michigan State University with a master’s degree in health communications, she currently serves on the faculty of University of Phoenix. Julie is a dynamic nutrition educator and expert on interstitial cystitis, providing wellness and nutrition education to individuals and groups using a tapestry of communication techniques. Realizing that dietitians were quickly losing their share of the nutrition education pie to self-anointed celebrity "experts," Julie intensified her mission to nurture the communication skills of dietitians so they can shout to the world that THEY are the nutrition experts. Carrie Zisman is a Senior Health Communications Specialist in the Health & Wellness Department at Lockheed Martin Corporation. She is responsible for developing and implementing corporate-wide programs on weight management, nutrition, and other health behaviors as well as providing strategic direction to the Health Promotion team. Prior to this, Carrie worked for over 17 years on developing and implementing award-winning health communication and education programs within both the public and private sector.
Carrie received her dietetics degree from the University of Vermont and completed a combined dietetic internship and master's at the Frances Stern Nutrition Center at New England Medical Center at Tufts University.
Rebecca Bitzer, MS, RD/LD, CEDRD is an award-winning registered dietitian who is both a seasoned nutrition counselor and successful business owner. Rebecca's passion includes empowering clients, registered dietitians, and nutrition interns. She employees six registered dietitians and six nutrition interns in her private practice Rebecca Bitzer, MS, RD & Associates. In 2011, Rebecca launched the Empowered Eating program, designed provide hope for people struggling with eating disorders. She is on the leadership committee for Sports, Cardiovascular and Wellness Nutrition's (SCAN) Disordered Eating and Eating Disorders (DEED) sub-unit and is excited to be the private practice chair of NE. In 2014, Rebecca co-authored a workbook for Registered Dietitians called Welcome to the REBELution: Seven steps to creating the nutrition counseling practice of your dreams. Barbara Spalding is a Second Career Registered Dietitian Nutritionist. She is a culinary dietitian and writer with a mission to empower readers to achieve their goals for better nutrition, a healthier lifestyle and feel more energized by eating healthier foods, reaching and maintaining a healthy weight and engaging in physical activities they enjoy. In her first career Barbara founded, grew, and managed an employee benefits and health insurance agency and consultancy with extensive experience working with small to mid-sized companies in the greater NY/NJ metropolitan area. She sold her first business to a large regional insurance agency and followed her passion for food and nutrition.
Barbara has two Masters and two Bachelor degrees. She earned a B.S. in Dietetics and M.S. in Nutritional Sciences from Rutgers, The State University of New Jersey. She completed her dietetic internship at the University of Medicine and Dentistry of New Jersey, now Rutgers Biomedical and Health Sciences. Rosanne is a registered, licensed dietitian in Pennsylvania with over 25 years experience. She received her Bachelor of Science degree in dietetics from Indiana University of Pennsylvania and her Master's of Science degree in Clinical Nutrition from the University of Pittsburgh in 1991. As a Nutrition Communications Consultant, she develops and implements communications programs for industry, health professionals, colleges, and corporations, including social media strategies and freelance writing.
